Butterscotch Blondies


1/4 cup (1/2 stick) butter
1 cup brown sugar
1 egg
3/4 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla
1/2 cup chopped walnuts (optional)


1. Preheat oven to 350 degrees F. Grease an 8-inch square baking pan.
2. In a small pan, melt butter over low heat. Stir in sugar until blended.
3. Let cool for 5 minutes, then add egg.
4. Sift in flour, baking powder and salt.
5. Add vanilla and nuts, if desired.
6. Spread batter into greased pan.
7. Bake 25 minutes (do not overbake).
8. Ask a parent to cut into squares while warm. Enjoy!
