Delicious Damper

When Tara visited Australia, she discovered all kinds of tasty foods. This traditional bread has a crunchy crust, but it’s soft and tender inside. In the past it was baked over a campfire, either in a can or wrapped around a stick.


2 cups flour
1 teaspoon sugar
½ teaspoon salt
1 teaspoon baking soda
2 tablespoons butter
1 cup milk


1. Preheat oven to 375 degrees F.
2. Combine flour, sugar, salt and baking soda in a large bowl.
3. Mix in butter until it forms fine crumbs.
4. Add milk. Mix to make soft dough.
5. Place the dough on a cutting board dusted with flour. Knead dough until smooth. Add a little flour if sticky.
6. Form dough into round loaf. Ask a parent to make a crisscross cut across the top.
7. Spray an 8-inch round cake pan with cooking spray. Put loaf in pan.
8. Bake 35 to 40 minutes, or until the outside is golden brown and toothpick poked into center comes out dry.
9. Serve warm with a meal or for a snack. Spread on butter and Berry Good Jam.

Variations: After step 3, add 1 cup grated cheese or ½ cup raisins (but NOT both) to the crumbly mixture. Then continue the recipe as normal with step 4.
