Fancy Cream

Devonshire cream is a topping for scones at fancy tea parties. It's not a liquid (like cream in coffee), nor is it sugary (like whipped cream on pie). The closest comparison would be homemade butter—cool, thick and naturally sweet. The real recipe for Devonshire cream requires milk fresh from the cow, but our recipe is much easier.


1 cup heavy whipping cream
1 drop yellow food coloring
1/4 cup sour cream


1. Stir food coloring into whipping cream.
2. Beat cream with an electric mixer until it forms stiff peaks.
3. Using a spatula, fold sour cream into whipped cream.
4. Serve with fresh-baked scones, along with a side of berry jam.
