Mama's Corn Bake

1/2 cup (1 stick) butter
1 egg, lightly beaten
1 can whole kernel corn, drained
1 can cream corn
8 ounces (1 cup) sour cream
1 box Jiffy corn muffin mix
grated cheese (optional)
sliced jalapenos (optional)


1. Preheat oven to 350 degrees F.
2. Melt butter in a two-quart baking dish.
3. In a large bowl, mix together egg, corn, cream corn, sour cream and muffin mix.
4. Stir in melted butter. Then pour mixture into baking dish.
5. If desired, top with grated cheese and sliced jalapenos.
6. Bake for 45 minutes to 1 hour, until lightly browned. Dish will remain moist in the center.
7. Serve warm for melt-in-your-mouth deliciousness!
