Tara's Travel Journal: Cocoa Soup

When Tara visited Iceland (in the October 2013 issue), she tasted sweet and creamy Cocoa Soup.


3 tablespoons cocoa powder
3 tablespoons sugar
1/2 teaspoon cinnamon
2 cups water
3 cups milk
1 teaspoon vanilla extract
2 tablespoons cornstarch
dash of salt


1. In a medium-sized pot, mix together the cocoa powder, sugar and cinnamon.
2. Slowly add the water and whisk until smooth.
3. Bring to a boil, then reduce heat and simmer for 5 minutes.
4. Stir in milk, reheat to a boil. Reduce heat and simmer for 2 to 3 minutes.
5. Mix the cornstarch with 2 tablespoons cold water. Add to soup and cook until it begins to thicken.
6. Remove soup from heat and allow to thicken for a few more minutes.
7. Serve hot with biscotti or whipped cream.
